Although gelatins vary widely in size and charge distribution all collagens (and thus
gelatins) have a characteristic primary structure and with the exception of the telopeptide
regions, i.e., a small region at the end of the -chain, glycine is found as the third residue in
all chains whilst proline, but not hydroxyproline, is frequently found to followglycine in the
sequence.
